[Characteristics of curry]
I Masala's curry is free of additives and chemical seasonings. It also contains no flour and is thickened with vegetables, making it a low-carb curry. It is also low in oil and salt, so it is not heavy.
●Keema curry...This curry uses a generous amount of the highest quality green cardamom whole. It has a clean, refreshing aroma and is not spicy but has a great spice flavor. It is made with half pork and half chicken mince, giving it a light taste.
●Butter Chicken Curry...A generous amount of tomato and cashew nut paste is simmered with only spices, without any broth. At I Masala, we don't use cream, but instead finish with milk. Tandoori chicken marinated in spices and grilled over charcoal is added at the end. It's a rich, creamy, and nutritious curry.
●Mutton curry: A large amount of onions are cooked until they turn amber, then simmered with rich spices such as brown cardamom, cinnamon, and cloves. The sweetness of the onions, the richness of the mutton, and the spices create an unparalleled flavor.

●Mushroom curry: A hearty curry made with five types of mushrooms, vegetables, and spices. No dashi is added, bringing out the umami flavor of the ingredients.
It is rich in dietary fiber and is recommended for improving the intestinal environment.
●Medicinal chicken curry: A mild curry made with spices unique to Nepal, such as methi and ajowan. In Nepal, methi and ajowan are taken when people are not feeling well. These spices have antibacterial and intestinal regulating properties, making them good for the body like medicine.
● Chickpea curry: This curry is packed with large chunks of chickpeas and is rich in dietary fiber. The spices have a gentle taste that complements the hearty flavor of the beans. As it is made without any animal products, it is also recommended for vegetarians and vegans.

◆Stone kiln
Charcoal is placed at the bottom of a cylindrical stone kiln, and the entire pot is slowly heated for over an hour. Stick the naan on the hot inner wall and it will be baked in 2-3 minutes.
Meat dishes are grilled on long skewers. It's easy and healthy because it removes excess fat. Especially recommended is the tender and delicious mutton grill! This is a luxurious dish that uses only the most delicious part of the mutton shoulder.
The reason why Emasala's curry doesn't last
We do not use wheat flour such as roux, and only use ingredients such as vegetables and meat and spices. Thickness is a natural thickening and cashew nut paste that comes out of simmering vegetables.
However, since cashew nuts are sweet and creamy, even if they are used in E-masala, they are used in small amounts. Most of the thickening is a lot of onions!!
◆ Plenty of enzymes for beauty and anti-aging ◎

◆Handmade dressing and sauce
A large amount of high-fructose liquid sugar is used in commercially available dressings. It is said to be a dangerous sugar because it causes a rapid rise in blood sugar levels, and many countries are regulating it. At E-masala, we make our own homemade soymilk mayonnaise (eggs and dairy products are not used), as well as dressings made with grated raw vegetables, homemade methi syrup, and more.
The sauce for the momo (xiaolongbao) and the sauce for the dal bhat are all handmade from scratch.
