Roasted Corn Cake

Seasonal limited-time plum anmitsu ✨
Enjoy the flavors available only at this time of year.
The green plums are simmered in a sweet syrup at a low temperature and served with homemade plum syrup.
The mochi balls are made with matcha and pumpkin, the agar is made from domestically produced tengusa seaweed, and the sweet red bean paste is cooked with subtly sweetened water.

Soak in salt water to remove bitterness.
Making holes in green plums with a kenzan (flower frog).
It is simmered slowly and carefully over three days, making sure the temperature does not exceed 70 degrees Celsius.
This was my first attempt at making simmered green plums this year, so it's not quite perfect yet, but it definitely tastes delicious.
